Question about Multiple Choice responses

Is there a way to change a multiple-choice quiz response in Storyline from a check box to a radio button easily?

It's probably not a good idea. Throughout the whole computer world, custom dictates that when radio buttons are used, only one at a time may be selected. When check boxes are used, multiple choices can be selected. Changing that won't get you arrested by the traditions police, but it will likely confuse and frustrate your learners. So you probably should change the type of interaction instead.
