Hi Colleen! I'm sorry to hear that you are encountering issues with the Knowledge Check block.
I understand the issue can be replicated in your LMS and in SCORM Cloud but not when previewing from within Rise. Have you tried publishing your course to Review as well to see if the issue persists? Have you also tried clearing your browser's cache or using a different supported browser to see if the issue is browser related?
If you are able to share your Rise course, I would recommend opening a case here with us so that our support engineers can have a closer look at what's happening.
